Observation: There is a very loud, high-pitched noise coming from the toaster.
There is only one hot holding unit available for holding hot chicken.
Corrective Action(s): Ensure that the toaster is working properly.
Repair the second chicken hot holding unit so that there will be sufficient hot holding space for times when you are busy.

Routine check:
Coolers are at 4 C and hot holding is above 60 C. Staff are keeping track of times and recording temperatures.
There is now a hand sink in the front hot holding and service area - good.
All hand sinks have liquid soap and paper towels in dispensers.
Quats sanitizer is at correct concentration for final rinse manual sanitizing.
