Hand wash stations stocked with liquid soap and paper towels.
Sanitize (quats) in spray bottle for sanitizing dining tables was at 200 ppm.
Bleach solution in buckets for storing wiping cloths in the kitchen area was at >100 ppm.
Refrigeration units were at or below 4 deg C.
Freezer units were at or below -18 deg C.
Hot holding for miso soup was above 60 deg C.
High temp dishwasher reached 76 deg C at plate surface.
Temperature log was available and up to date. Include all freezers in the temp log.
Sushi display cooler - 3-4 deg C (internal temp).
All foods and food related items were stored off the floor.
Food items in the coolers were covered.
Shelving units, floor and equipment were in sanitary condition.
General sanitation was satisfactory.
Staff hygiene - clean uniforms and hair restraint for kitchen staff.
Dry storage area was organized and no potentially hazardous foods stored in it.
Ice machine was clean and recently service. Ensure ice machine is clean and sanitized in a regular basis.
Washrooms was clean and provided with liquid soap and paper towels.
Note: Provided operator with Food Safe 1 Reminder card. Operator has recently renewed his Food Safe 1 training.
Ensure there is at least one person on duty with Food Safe 1 training per shift.
Kitchen manager to take Food Safe 1 training.
Discussed with operator ceiling tiles in the kitchen area. These ceiling tiles need to be changed to non-porous, washable ceiling tiles in the future.
