Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: No sanitizer detected in the sanitizing compartment of the warewashing sinks with containers submerged. No sanitizer in the service area to store wiping cloths. No sanitizer detected at the dispenser.
Correction: Repair/replace sanitizer dispenser.

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: No hot water available at the warewashing sink or hand sink. Closure order issued.
Correction: Repair/replace hot water tank to ensure it is in good working order an large enough capacity to supply the premises with hot water during operations.
Comments

Inspection conducted to follow up on the invoice for the repair/replacement of the hot water tank. Telephone conversation with the owner who said that the hot water tank had a leak and had to be replaced. Owner said that the company did not give him a receipt and that that these things take time. Explained that I have no way of verifying that the work has been done without an invoice. Owner said he is out of town this week and will have the invoice by the end of next week - Friday, December 13th, 2019.
Staff on site confirmed that they witnessed the hot water tank being replaced last Saturday and Sunday. Premises had hot water at time of inspection.
