Observation (CORRECTED DURING INSPECTION): Ice scooper observed laiden with cream in non-functioning dipper well
Corrective Action(s): As per last report if the dipper well is not in use reused ice cream scoopers MUST be in ice (otherwise they need to be dishwashed everytime)

Repeat infraction -will require increased enforcement in subsequent inspections

Observation: 1. Preparation cooler at grill broke down again this morning as per operator

The unit apparently was working all week after it was repaired last week

2. Dipper well is not working
Corrective Action(s): 1. Operator is maintaining the perishables in this unit on ice and only for 2 hours -backups are available in walk-in cooler. Repairman was onsite at time of inspection and should be repaired by the afternoon -OK

-All handsinks well stocked and clear for use
-Sanitizer solutions maintained >200ppm as per QUAT test strips
-2-door display fridge 4 deg C (meats) -NOTE: repairman stated the issue here were the oil boxes were covering the exhaust vents below the doors -this area needs to be clear for adequate fridge ventilation
-cleaning issues have been corrected under the stove line
-no observances of eating/drinking in active food preparation areas
-ensure your Daily Record Log sheets are maintained for dishwasher (>50ppm chlorine residual), fridges (=<4degC)
