Placed into cooler frozen earlier in day. Corrective Action(s): Operator closed lid then monitored temperature. Temperature dropped to 7C during inspection. Monitor to ensure temperature drops to below 4C. Heat from pizza oven affects temperature of inserts in prep cooler. Close lid when not preparing food to hold temperature to less than 4C. Only fill inserts to use up quickly (within 2 hours). Store remaining food in cooler below inserts at less than 4C. Violation Score: 5

Hand sinks equipped with soap and paper towel Coolers less than 4C/-18C Dishwasher over 50ppm chlorine residual Glasswasher over 100ppm residual chlorine Hot holding over 60C Monitor pizza cooler, temperature running warm (10C). Only cheese, vegetables inside currently. Operator has meats stored below in cooler at less than 4C. Operator will contact refrigerator repair specialist for information regarding methods to keep cooler temperature down. Thermometer on outside of cooler states 2.7C, however, cooler is warming up on top where inserts are up to 10C.
