- Proper time-tracking is in use for inserts of toppings/condiments and any potentially hazardous food items held at room temperature - good.
- All hand washing stations were properly supplied. Sink at coffee station is working.
- Quat sanitizer solution available at 200 ppm in buckets and in three-compartment sink. Test strips available for use.
- Three-compartment sink was properly set up for manual warewashing.
- All equipment maintained in sanitary conditions.
- All coolers were measured to be at 4C or colder.
- All freezer temperatures were satisfactory.
- All hot held food items were at 60C or hotter.
- Accurate thermometers available. Ensure each refrigeration unit is equipped with its own separate thermometer.
- Food storage practices satisfactory. All food properly covered and stored off the ground.
- Proper thawing (in walk-in cooler) practices noted.
- No signs of pest activity noted at time of inspection. Pest control is in place.
