Observation (CORRECTED DURING INSPECTION): Sanitizer solution was not available at time of inspection. Bleach bottle present.
-Staff made sanitizer solution in bucket at time of inspection. Measured at 200ppm chlorine.

*Ensure a sanitizer solution (100-200ppm chlorine) is available at all times in food prep area to sanitize food contact surfaces. This can be made with 1 tsp of bleach in 1 L of water.

Observation (CORRECTED DURING INSPECTION): Handsink in front area was blocked with glassware and dishware.
-Staff removed items at time of inspection.

*Handsinks are for handwashing only. Ensure handsinks are fully accessible at all times for staff to properly and frequently wash hands.

Observation: 1) Several beverages stored inside ice machine. This can contaminate the ice.
2) Metal ice scoop stored inside ice machine. Handle of scoop was stored inside ice. This can contaminate the ice.
3) A few opened canned foods noted inside cooler units.
4) Bag of potatoes stored directly on the ground near back area.
Corrective Action(s): 1) Remove beverages from ice machine. Do not store items directly in ice.
2) Store ice scoop in clean container outside ice machine.
3) Once canned foods are opened, transfer food into food-grade containers. Do not store foods in opened canned containers as metal can leach and contaminate food.
4) Store foods off the ground and store in food storage area to protect foods from contamination.

Observation (CORRECTED DURING INSPECTION): Container of raw meats were thawing at room temperature. Per staff, raw meats were thawed in walk-in cooler then brought out to room temperature.
-Staff moved container of meats to walk-in cooler at time of inspection.
-Do not thaw food at room temperature. Foods can be properly thawed under cold running water or in the cooler at or below 4C to minimize bacterial growth.

-2-door stand-up cooler: 4.7C *NOTE: Prep cooler is used frequently. Please closely monitor temperature of unit to ensure foods are stored at or below 4C.

-Chest freezer: -22C
-Walk-in cooler: 4C

-Handsinks have hot/cold running water, liquid soap, and paper towels.
-High-temperature dishwasher measured 71.2C at plate surface.
-Vent hood has some grease build-up noted. Next service date is September 2022.
-Food storage is satisfactory. Raw meats are stored separately from ready-to-eat foods.

NOTE: Handsink in kitchen area has plumbing disconnected for number of years. 2-compartment sink is equipped with paper towel dispenser and liquid soap. Per previous follow-up inspection report, file was to be reviewed. Will consult with district inspector.

-No signature obtained due to COVID-19 protocols. Report printed and reviewed with staff on-site.
