Observation (CORRECTED DURING INSPECTION): Ice cream scoop was being stored in a cup of water at room temperature in between uses.
Corrective Action(s): Discontinue this practice. As noted on previous inspection, ice cream scoops must be washed after each use if there is no dipper well available for use. Scoop washed in dishwasher at time of inspection.

Observation (CORRECTED DURING INSPECTION): Glasswasher sanitizer supply (Mikroklene) was empty at time of inspection.
Corrective Action(s): Staff replaced sanitizer supply at time of inspection. 12.5 ppm iodine detected.
*Ensure to monitor and replace chemical supplies before they run out.

Observation: Floors under and behind cooking equipment (fryer, grills) have a large accumulation of grease and food debris again.
Corrective Action(s): Once a week, pull out all grills, fryers, etc. and thoroughly clean and sanitize floors/walls/sides of equipment.
This should be a part of this facility's sanitation plan/cleaning schedule.

Comments

- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels.
- Low-temperature chemical dishwasher dispensed 100 ppm chlorine to dish surface, detected after rinse cycle
- Quats sanitizer solution available in spray bottles at 200 ppm
- Coolers were maintaining temperatures at 4C or colder. *Drawer coolers under grill not in use.
- Freezers were maintaining temperatures at -18C or colder
- Hot held food items were measured to be above 60C
- Proper thawing and proper cooling methods were observed at time of inspection
- Ice machine maintained in sanitary condition.
- Ventilation canopy maintained in sanitary condition
- Food storage practices satisfactory

Note: Small number of fruit flies/drain flies observed in dishwashing area. Ensure to keep this area clean and remove garbage/food scraps daily.
