Observation (CORRECTED DURING INSPECTION): - Potentially hazardous foods stored in 2 door reach in cooler were stored were above 4C.
Temperature of food product measured with probe thermometer and were as follows: container of sliced ham 9.2C, container of sliced prosciutto 10C, container of minced chorizo 10.8C, cartons of pasteurized liquid whole egg 14C
Cooler was operating above 4C. Time product was stored above 4C unknown. Temperature record from the morning indicated temperature of cooler was 2C. Asst Mgr reported this would have been taken at 3am and reported the temperature had not been checked since that time.
Corrective Action(s): - Food products above discarded by staff member at time of the inspection.

Observation: - Single door cooler has been added to back of food premises adjacent to open door to staff washroom which is not a suitable location
- Revised layout plan was not submitted for reivew and approval prior to addition of cooler.
Corrective Action(s): - Submit layout plan to reflect addition of cooler with cooler relocated to area which ensures safe and sanitary handling of food and is not adjacent to washroom. Revised layout requires review and approval by undersigned. [Correction date: 17-Aug-2021]

Observation: - Food debris noted on hard to reach areas of the floor such as the edges and under equipment, shelving and prep tables.
Corrective Action(s): - Thoroughly clean floor to remove food debris. [Date to be corrected by: 17-Aug-2021]

Observation: - 2 door reach in cooler was not maintaining food products at 4C or colder.
- Temperature on external gauge read 10-15C during inspection
- Ambient air temperature inside cooler was 14.5C
- Food products stored cooler ranged from 9.2C to 14.1C with the exception of products which were in the process of thawing and were 2-3C
Corrective Action(s): - Repair or replace cooler so that it is able to maintain food products at 4C or colder.

- Do not store any potentially hazardous foods in this cooler until it is capable of maintaining products at a temperature of 4C or colder.
- Single door cooler is being used for storage of potentially hazardous foods in the interim. Products which were thawing and still under 4C were transferred to the back cooler.

- Handsink supplied with liquid soap and paper towel
- Observed frequent handwashing by foodhandling staff during inspection
- Time tracking in place and records kept for savoury products with specified acceptable ambient temperature holding times.
- Quats sanitizer present in spray bottle for sanitizing food contact surfaces. Concentration measured 200ppm.
- Quats sanitizer present from dispenser for sanitizing step for manual warewashing. Concentration of solution from dispenser measured 200ppm.
- Asst Mgr knowledgeable about proper warewashing procedures (wash, rinse, sanitize, air dry)
- Foodsafe level 1 requirement met at time of the inspection. Asst Mgr present and has completed Foodsafe level 1
- No signs of pest infestation present at time of the inspection. Pest control contract in place. Viewed most recent service report.
