Observation (CORRECTED DURING INSPECTION): A container to cooked gyoza at 27C stored underneath the prep counter at back. Operator said it was cooling at the time, however, it did not appear to be cooling as there was a lid on it and there was no record of how long it was sitting out at room temperature for. Gyoza was discarded. Discussed proper cooling method: 2 hours from 60C to 20C and 4 hours at 20 to 4C, then kept at 4C.

Observation (CORRECTED DURING INSPECTION): The handsink at the front was blocked by a portable cooler. Operator moved the cooler to the side when notified. Discussed with operator to clear the hand sink area of any obstruction. No hand sink noted at the back so staff is required to use the hand sink at the front.

Observation: Back door was open with the screen door closed. Air gap noted along the vertical edge.
Corrective Action(s): Install weather stripping to the side to cover the gap to prevent entrance of pests.

Comments

-Temperatures:
LA sushi cooler at = or <4C
Sushi display cooler at front = or <4C
Chest freezers at -18C
Sliding door cooler = or <4C
-Prawn tempura found at 31C. Operator mentioned it was sitting out for 30 minutes. Discussed with operator to have a time stamp for these food items sitting at room temperature and that they should be discarded after 2 hours.
-No evidence of pests at time of inspection.
-Hand sink had liquid soap, hot and cold running water, paper towels.
-High temperature dishwasher met sanitizing requirement of 83C at the plate.
-General sanitation could be improved overall. Operator cleaned and sanitized the refrigerator doors and handles at time of inspection. *Operator to launder the fabric curtains.

Items from previous report completed:
Code 306: corrected for most items. Operator to clean the fan cover in the sliding door cooler by end of the day today (some dust build-up still observed). Discussed to remove the fan cover and clean it (do not clean in place as this is the only cooler and opening it too long would cause temperatures of food to go up).
Code 307: corrected. Operator replace the green turf with another type of material, which is okay for now.
