Reviewed storage of potentially hazardous foods with operator - soft noodles, meats and cut vegetables to be removed from coolers when needed for immediate preparation and brief periods of peak operation.

Wiping rags stored in 100 ppm chlorine sanitizer, ensure residual is tested throughout day to confirm correct concentration.
Both plastic food prep. carts have been removed and replaced. Ensure new carts and cleaned frequently throughout the day to maintain sanitation.

Customer complaint received November 30, 2016. Customer claims to have food an insect in order of noodle soup. Discussed complaint with operator. No complaints received directly to business from customers. Reviewed food storage practices to protect food from contamination and reviewed staff procedures to visually check food for signs of contamination during food preparation.
