Observation: Ice machine observed with food debris build up. Ice machine was turned off during time of inspection. Operator advised to purchase bagged ice from approved source for meantime for consumption purposes.
Corrective Action(s): Clean and sanitize ice machine with 100 ppm chlorine as per manufacturer instructions. Ensure ice machine is cleaned and sanitized more frequently to prevent mold/food debris build up.

Observation: One to two house flies observed on site in the front service area. No fly traps are currently in place.
Corrective Action(s): Pests such as flies are carriers of diseases and can potentially contaminate food. Monitor fly population and install sticky fly traps in the kitchen (away from food preparation areas). If fly population increases, contact a pest control company to assess the problem.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation (CORRECTED DURING INSPECTION): Front entrance door observed propped open during time of inspection. Operator closed the door during time of inspection.
Corrective Action(s): All doors and windows must remain closed at all times to prevent potential pest entry. Consider installing screen doors if doors are to remain open for ventilation purposes.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General sanitation of premise is not satisfactory. The following areas are observed in unsanitary condition:
- Backsplash behind 2-compartment sink
- Outside of ice machine
- Around mop sink area
- All walls observed with food debris
Corrective Action(s): Clean and sanitize all above mentioned areas to remove grease, food debris and mold build up and to prevent potential contamination to utensils, dishware and food.

Routine Inspection Conducted

Observations:
- All coolers at 4'C or lower
- Stand-up stainless steel freezer at -19'C
- Hand washing stations supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher measured at 71'C at plate surface
- Bleach sanitizer in spray bottles measured at 200 ppm chlorine concentration with test strip
- Donair vertical broiler observed on during time of inspection
- Dry storage area kept in sanitary condition with food stored at least 6 inches off the floor
- All food observed covered in coolers and freezers
- FOODSAFE Level 1 trained operator available on site

*REMINDER: do not store knives behind the 2-compartment sink as this is not an adequate space to maintain clean and sanitary utensils and dishware. Store knives on the knife magnet above the preparation table or in an alternative designated area protected from potential contamination

NOTE: temperature log is not maintained (as per approved food safety plan). Ensure temperature logs are maintained to be verified by the health inspector during inspection
