-Coolers measured 4C or less: drink cooler, walk in cooler, prep cooler, standing door cooler
-Freezers measured -18C or less: walk in freezer, standing freezer
-Ice cream freezer measured -14C
-Dishwasher measured 100ppm chlorine
-Foods are covered and protected from contamination
-Hot holding measured above 60C
-Note: stainless steel bowl mixer is used for the dosa batter. This will be looked into further. Submit documentation regarding the equipment used for making dosas. Reminder all equipment must be smooth, durable, free of cracks, breaks, pits, chips, or any other imperfections. They must also be easily cleanable. |
