Make sure to limit the volumes AND times of the proteins left at room temp. to two hours and these foods left over at the end of the rush must be thrown out and not re-used again. Get paper towels in the staff washroom - "out of order" washroom. Make sure to transfer open cans of high acid liquids (i.e. tomato sauce) to non-oxidizing container once opened.
