203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Two large (approximately 15L) buckets, one full and one half full, containing manchurian sauce were observed in the walk-in cooler. Internal food temperature measured 12 degrees C and 10 degrees C, respectively. Manchurian sauce cooked yesterday.
Corrective Action(s): Operator added a large quantity of bleach to each of the buckets, under the direction of the Environmental Health Officer, in order to prevent the food from being served to the public as it could not readily be discarded at the time of inspection. This is a repeat violation. Further repeat violations may result in enforcement action.

Observation (CORRECTED DURING INSPECTION): - Bleach water sanitizer in three labeled spray bottles was above 200 ppm chlorine bleach.
- Bleach water sanitizer prepared in sanitizing compartment of three compartment sink was at approximately 10 ppm chlorine bleach.
Corrective Action(s): Concentrations adjusted. All bleach water sanitizer (spray bottles, three compartment sink) was measured at 100 to 200 ppm chlorine bleach. Ensure sanitizer is maintained at safe and effective concentrations for sanitizing food contact surfaces, equipment, and utensils (e.g. 100 to 200 ppm chlorine bleach).

Observation (CORRECTED DURING INSPECTION): - Open metal can containing tomato sauce was observed in walk-in cooler.
- Food colouring labeled "not fit for human consumption" observed in dry storage.
Corrective Action(s): Above-noted items discarded. Ensure the contents of cans are transferred to an appropriate, foodgrade container with a cover for storage once cans are opened. Do not store food in open cans as the interior lining may degrade/leach over time, potentially contaminating food. Ensure food colouring product is appropriate for human consumption.

Area of wall with hole noted on previous inspection report has been sealed.
Significant improvement in sanitation and organization observed. Premises and equipment generally in clean condition with few exceptions; area under microwave requires additional cleaning. To be cleaned today.
Raw animal products (eggs, meat) not stored above ready-to-eat foods.
No signs of pest activity observed at time of inspection.
