Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Walk in cooler air temperature is above 4 C (10 C measured). Food temperature is also above 4 C but is lower than 10 C (8-9 C). Temperature records are available from yesterday and show that the air temperature was <4C. Staff advises that air temperature yesterday evening was <4C but noticed the walk in was not below 4 C this morning.
Correction: All potentially hazardous foods must be stored so that the food temperature is 4C/ 40F or colder. Immediately move all chicken to alternate coolers (Management will move to freezers). Defrost fully in cooler before cooking. Check food safety plan for salads: If salad pH is <4.6, it is ok. If not, follow your food safety plan as discussed. Technician has been called for repair of walk in cooler.
