Observation: Back door at the end of the hallway has an approximately 1/2" gap.
Corrective Action(s): Seal the gap (e.g. add a metal seal adapter/plate or a door sweep) to prevent entry of pests and rodents into the facility.

Comments

Routine inspection conducted of the facility. Facility is generally maintained in very good sanitary condition and is well maintained and operated. The following observations were noted at time of inspection:

Temperatures were all within health requirements:
Front prep cooler at 4-5C and was on a defrost cycle at time of inspection
Stand-up coolers in kitchen area are at 4C or less
Milk undercounter coolers at front-of-house at 4C
Stand-up freezer in kitchen area at -18C
Take-out freezer at -17C
Walk-in cooler at back shed area at 1C
Walk-in freezer at back shed area at -25C
Hot-held soup products were at >=75C (Min: 60C)

Hand wash station adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
Low-temperature dishwasher sanitizes at a final rinse cycle of 50 ppm chlorine residual
Bleach spray bottle available for use at 100 ppm chlorine residual
Utensils, knives, plates maintained in good sanitary condition inside of the kitchen area. Magnetic knife holder is well maintained
Ventilation canopy in kitchen is in excellent sanitary condition and is cleaned on a weekly basis
Back dry storage area is generally well organized. Dry storage containers in kitchen space are inside containers with tight-fitting lids
Food preparation table maintained in good structural and sanitary condition
FRP board behind dishpits and plumbing fixtures were well maintained
Chemicals stored separately from food products and food preparation areas
No evidence of recent, visible pest activity was noted at time of inspection
Professional pest control company arrives on a monthly basis
Operating permit was posted and up-to-date
Operator has FoodSafe 1 Certification
