->Ice has melted in the prep cooler and temperature was measured at 6.8C. Thermometers are placed in the unit to monitor temperature. Please request for professional service still and keep non-potentially hazardous food stored in this cooler only. Send the service report to the undersigned. Resume regular use of this cooler after e-mail confirmation.
Sanitizer station properly set up in the front with 200ppm Quats, wiping clothes submerged.
Hot holding units were adjusted to hold broth >60C.
Directed manager to keep a probe thermometer in the front for easy access.
Glasses have been rearranged in the cooler.
Proper warewashing gloves in use.
Handwashing signs posted, additional ones and FHA ware washing signs provided to operator.
Thermometer also available in the chicken station. Reminder that karage and chicken balls must be cooked to a minimum of 74C/165F.
->Staffs tried to secure prep table over ice machine but still not fully secured. They will be contacting company to properly secure this next Monday.
Quats test strips have been ordered.
Manager's Foodsafe to be e-mailed; please retain a copy onsite for reference.
->Remind all staffs in the front that handwashing is to be done in the handwashing sink only, not food prep sink as it is not equipped for proper handwashing.
