Observation (CORRECTED DURING INSPECTION): A pot of gravy was stored on top of a stove but at 52C.
Corrective Action(s): Ensure to reheat gravy to 74C before hot holding it at least 60C.

Observation: Multiple wet wiping clothes noted to be left on the counter between uses.
Corrective Action(s): Place all wet wiping clothes in buckets of 100ppm bleach sanitizer between uses.

Observation: Many items in the walk-in cooler and undercounter cooler were stored without cover.

Observation: Some mice droppings found under dishwashing sinks. No other signs of mice noted in the facility.
Corrective Action(s): Please remove the droppings, clean and sanitize the noted area.

Observation: Food debris collected on floor to wall joint under sandwich prep cooler, between wall and chest freezers, under bar/ice machine area and under fryer.
Corrective Action(s): Please do a deep clean in noted areas above. Deep cleaning should have a fixed schedule.

Observation: Walk-in cooler was measured at 6-7C after lunch rush.
