Observation (CORRECTED DURING INSPECTION): Observation: During inspection observed a dust filled kitchen fan blowing air towards the open prep-cooler.
Corrective Action(s): Corrective Action: Remove / clean the fan to ensure dust debris does not blow onto the open prep-cooler.

Observation: Observation:
1) During inspection a leak was observed coming from the fixture at the 2-compartment sink.
2) During inspection a leak was observed from the bottom of the ice holding basin in the server area.
3) Observed a non-functional paper towel dispenser in kitchen.
Corrective Action(s): Corrective Action:
1) Repair / replace the fixture to be in good order.
2) Repair / replace the ice holding basin at the server area.
3) Repair / replace the paper towel dispenser.
* Operator called a plumber to service the aformentioned equipment during inspection.

Comments

- Hand washing stations equipped with hot / cold water, paper towel, liquid soap
- Washrooms are equipped with hot / cold water, paper towel, liquid soap

Temperatures:
- All fridges were below 4C during inspection
- All freezers were below -18C during inspection
- Hot holding inserts were above 60C, soup probed for internal temperature of 68C
- Thermometers present in all fridges & freezers

- Observed proper cooling procedures during inspection
- Observed adequate hand washing during inspection

General sanitation and maintenance:
- Low temperature dishwasher was measured at 47.9C on plate, and 50ppm chlorine residue
- 2-compartment sink available with plugs & approved sanitation (QUATS)
- QUATS dispenser measured at 200ppm
~ Sanitizer in buckets was available throughout the facility (free of debris)
- QUATS sanitizer buckets measured at 200ppm
- Food storage was organized & 6-inches off the ground
- No signs of pest activity during inspection
- Ventilation head is maintained clean & sanitary (next service Oct 2023)
- Ice machine was clean & sanitary

Administrative:
- Permit is conspicuously posted with an up-to-date decal
- Temperature logs were available & maintained
- FoodSafe Level 1 or equivalent was available during inspection
- Pest Control records were available via Orkin
