Observation (CORRECTED DURING INSPECTION): Sink and surface sanitizer was measured between 848-1130ppm DDBSA at the tower.
Corrective Action(s): Get the unit recalibrated to ensure it's dispensing between 272-700ppm.

Comments

General Comments:
Coolers are below 4 degC; foods in all the inserts are at or below 4 degC
Freezers are at -18 degC or less
Hot holding was above 60 degC
Handsinks are fully equipped; washrooms are fully equipped; bar sink's fully equipped
Dishwasher rinse has 100ppm Chlorine.
Glasswasher in bar area had 50ppm chlorine, once primed.
Temperature logs are being maintained
Tongs and other utensils are stored in ice. ENSURE THEY'RE WASHED/REPLACED EVERY 4 HOURS.
Sink and Surface Cleaner/Sanitizer is used for sanitizing.
At least one staff on duty had FS level 1 or equivalent
Exhaust hood is clean. Next service date is at the end of the month.
Ecolab pest control in on contract. Service report from Nov. 10th reviewed. ENSURE ALL RECOMMENDATIONS ARE FOLLOWED UP ON. SOME ARE OUTSTANDING FROM APRIL, 2023.

MANAGEMENT MUST BE AWARE OF APPROPRIATE FOOD STORAGE/COOLING TEMPERATURES ALONG WITH THE TYPE OF DISHWASHER(S)/GLASSWASHER(S) ONSITE SO THEY CAN ENSURE APPROPRIATE SANITIZATION IS IN PLACE.
