*Install protective shatter-proof sleeves on all tube lights in the kitchen ( By May 20, 2019)
* Cover the exposed drywall in the kitchen with either a plastic sheet or a painted wooden panel.
* Ensure that trays of eggs are always stored on the bottom shelves below salsa's and other sauces.
* Ensure to monitor and record temperatures for all coolers, hot held foods ( hot sauces, rice, refried beans) and freezers at least once a day.
* You must record the actual concentrations of the dishwasher and bar washer chlorine sanitizers on a log sheet.
* Discard all unused bottles of cleaners and sanitizers.
