Observation (CORRECTED DURING INSPECTION): Mechanical dishwasher observed to not be dispensing chlorine sanitizer at start of inspection.
**Corrected during inspection** Dishwasher measured 50ppm by end of inspection.

Develop and maintain sanitizer concentration log immediately. As it is unknown when dishwasher has failed, all equipment in kitchen is to be washed and sanitized immediately.

Observation: 1. Build up observed on nozzle of soda gun.
2. Bread in bags stored directly next to handwashing station
**Corrected during inspection** Inspector instructed staff to relocate bread. Do not store food meant for restaurant next to handwashing station as water may splash onto it.
3. Drink lines observed to be covered by ice meant for human consumption.
Corrective Action(s): 1. Clean and sanitize. Educate staff on proper cleaning procedures. Develop and maintain sanitation log to ensure all areas of facility is cleaned and sanitized regularly.

3. Recommended to keep ice in separate cambro tray that is washed at least daily. Lines are not cleaned/sanitized, and its sanitation cannot be guarenteed to not contaminate ice.

Observation: 1. Gap observed under screen door in kitchen. Pests can easily enter facility.
2. Bait station observed to be used as a door stop.
