- All temperatures meet health requirements:
* Walk in cooler at 4C
* Walk in freezer at -14C
* Beverage display case at 4C
* Sandwich prep cooler at 4C
* Dairy undercounter cooler at 2C
* All hot holding units maintaining food temperatures of >60C
- Temperature logs kept and maintained (electronic system and hard copy system being utilized)
- Ice machine and scoop maintained in sanitary condition
Note: Ensure to organize cleaning equipment stored around ice machine

- QUAT sanitizer available throughout facility, QUAT concentration in buckets at 200ppm, time stamp available
- QUAT sanitizer concentration at 200ppm in 3 compartment sink
- Sanitizer test strips available for monitoring sanitizer concentrations
- High temperature dishwasher available, adequate sanitization temperature reached via hot water (71C)
- Good employee hygiene exhibited during time of inspection
