Observation (CORRECTED DURING INSPECTION): Cut vegetables and tuna stored in inserts of prep cooler storing mostly vegetables were probed to be at ~7C. Milk held in undercounter portion of prep cooler was also probed to be at 7C.
Corrective Action(s): Tuna and milk moved to the other properly functioning prep cooler at time of inspection. Cut vegetables must be used up within the next 2 hours or discarded after 2 hours. Ensure inserts are only filled half-way to promote better air circulation.

Observation: Prep cooler storing cut vegetables, tuna, and milk was measured to be at 7C. Top of prep cooler was propped open at the beginning of inspection.
Corrective Action(s): Keep top of prep cooler closed in between uses. Adjust prep cooler temperature so that it can maintain temperatures at 4C or colder. Monitor this cooler to see if temperature decreases to 4C - call for servicing if necessary and keep invoice available on-site. Do not store any perishable food items in this cooler until it is capable of maintaining 4C or colder.

Comments

- Vegetable prep cooler is still not maintaining temperatures at or below 4C. Operator stated cooler was serviced previously, however no invoice was available on-site for review.

**Follow-up inspection to occur next Thursday, Sept. 21st. Ensure prep cooler is repaired and keep a copy of the invoice on-site. Use other functioning coolers in the meantime for storing potentially hazardous foods.
