Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Black buildup of debris and mould was observed inside the ice machine.
2. Food residues were present on the blades of a tomato slicer.
Correction: 1. Drain the ice and clean and sanitize the interior of the ice machine in accordance with the manufacturer's cleaning directions to remove the buildup and maintain it in a clean condition.
2. Disassemble the tomato slicer and wash, rinse, sanitize, and air dry the blades to maintain it in a clean condition.
Correct today and prior to reuse.

Observation: Buildup of black debris/mould was still evident inside the ice machine. Staff informed that they have drained it today and would clean and sanitize it today to maintain it in a clean condition.
Correction: Drain the ice and clean and sanitize the interior of the ice machine in accordance with the manufacturer's cleaning directions to remove the build-up and maintain it in a clean condition; Correct today & prior to reuse for ice production.

Follow up inspection:
-Ice machine had been cleaned and sanitized to remove the observed black debris/mould.
-Ensure the ice machine is cleaned and sanitized in accordance with manufacturer's cleaning directions on a regular basis to maintain it in a clean condition and to protect the ice from any potential contamination.
