209 - Food not protected from contamination [s. 12(a)] Observation: Food debris/residue on metal wire shelving in the walk-in cooler. Various ingredients stored on shelves in open containers could be exposed to contamination when containers of food are moved on the shelves. Corrective Action(s): Cover foods in the walk-in cooler with food-grade lids, plastic film, etc to protect against contamination. Violation Score: 3 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: 1) Stove and surrounding area (walls & floor) has substantial oil and food residues on surfaces. 2) Metal wire shelves in the walk-in cooler have food/residue buildup. Corrective Action(s): Thoroughly clean and sanitize the premises, with extra attention to the above-noted areas. Violation Score: 9 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Sanitizer supply for the low-temp chlorine dishwasher is empty. Operator states that they discovered the empty sanitizer last night and have already placed an order for more sanitizer from the dishwasher supplier and they are scheduled to be delivered this afternoon. Corrective Action(s): Dishware must be manually-sanitized in the 3-compartment sink until dishwasher is re-supplied. Follow-up inspection scheduled for later today to confirm dishwasher supplies are replenished. Violation Score: 9 311 - Premises not maintained as per approved plans [s. 6(1)(b)] Observation: Range exhaust ventilation is overdue for cleaning. Service tag indicates next cleaning was due in January 2023. Corrective Action(s): Schedule cleaning of the exhaust ventilation as soon as possible. Violation Score: 1
