Observation:
The exhaust filters have accumulated grease in them. This is a fire hazard and it will attract pests.
Corrective Action(s):
Remove the exhaust filters and clean them to remove all the grease. Increase the frequency at which this is being done.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers 18C or colder; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- Quats sanitizer in 3-comp sink was 200ppm.
- Bleach sanitizer for clean cloth bucket had [Cl2] of 100-200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water. All hand sinks accessible, not block, and not being used for other activities (rinsing of coffee urns, etc.).
- All foods stored in food grade containers; covered; labeled; date coded; stored in groups to prevent cross-contamination; and stored 6" off the floor on racks, pallets, or platforms.
- No expired foods for sale or in use. FIFO rules being followed.
- General sanitation level is satisfactory. Exhaust vents professionally cleaned in Jan. 2019 (as per service sticker), next cleaning due in May 2019.
- No signs of pests.
- All surfaces are in good working order, durable, sealed, and cleanable.
- FoodSafe certified staff present.
- Informed Dining Program verification report completed.
