Observation (CORRECTED DURING INSPECTION): Grinder and can opener has food debris accumulation.
Corrective action: Staff washed and sanitized the equipment during inspection. Equipment should be cleaned and sanitized frequently to prevent microbiological growth and/or toxin production which may potentially contaminate food.

Observation (CORRECTED DURING INSPECTION): No sanitizer available in back and main prep area. Serving area sanitizer measured at 0ppm chlorine.
Corrective Action: Staff prepared fresh sanitizer during inspection measured at more than 200ppm chlorine. Fresh sanitizer must be prepared each day and changed as needed to make sure 100-200ppm chlorine is always available to adequately sanitize food-contact surfaces.

Observation (CORRECTED DURING INSPECTION): 1) Single use container used as scoop in dry storage bins.
Corrective action: Single use container in dry storage bins were discarded during inspection. Use a food-grade scoop that is stored outside the bin in a clean container. Single-use container cannot be adequately washed and sanitized and therefore cannot be used. Single-use containers must be discarded after each use.
2) Ice scoop stored in a container with other items, in unsanitary condition.
Corrective action: Wash and sanitize the scoop and place in a separate container in sanitary condition to prevent potential food contamination.
3) Food bins in dry storage are not covered.
Corrective action: All foods must be completely covered to prevent potential contamination of food.

Observation: Chest freezer lid is broken and ice build up is present. Foods near top of the chest freezer is 0 - to -4C.
Corrective action: Operator transferred foods from the top of the chest freezer to the stand-up freezer which was measured at -18C.
-Defrost chest freezer to remove ice build-up.
-Operator mentioned a new freezer will be purchased within couple of weeks.

-Low temp. dishwasher measured chlorine at 100ppm at dish surface.
-Exhaust canopy is clean.
-Ice machine is clean. Make sure to store scoop in separate container.
-All handwashing sinks on premise is supplied with hot/cold water, liquid soap and paper towel.
-All lights are covered with shatter proof cover.
-Washroom is in sanitary condition.

Storage
-All foods store 6 inches off floor.
-Chemicals are stored underneath 2-comp sink.

No pest activity was noticed during inspection.
Manager and chef have Food Safe Level 1.
Temperature and sanitation log is present and completed.
