Observation: Vegetable and sauces prep cooler measured between 7 and 10 C. Risk to food safety for sauces and avocado topping.
Corrective Action(s): Unit needs to keep food below 4 C at all times. Have serviced by technician. Limit sauce volumes and replace after no more than 2 hours.

Observation (CORRECTED DURING INSPECTION): Quats in spray bottle measured close to 0 ppm. No spray bottle in front area and sani-buckets empty. Main feed at sinks dispenses at 200 ppm.
Corrective Action(s): Changed spray bottle to fresh solution. Make sure spray bottles provided at front and back of store at all times and solution changed more regulalry to ensure 200 ppm solution maintained. Alternatively, use red sani-buckets for front and back prep areas and change every two hours or more if needed. Review at follow up inspection noted on report.

Three sink method of manual dishwashing in place. Make sure to rinse detergent off cleaned dishes before they go into sanitizer sink.
Walk-in cooler light still not replaced. This and freezer unit dark and difficult to clean. Corners and hard to reach areas of unit observed with food debris build up. **Change light bulb to stronger ones.
Meat display cooler, under counter cooler, walk-in cooler all less than 4 C. OK.
hand wash stations stocked with liquid soap and paper towels. OK.
General sanitation pretty good.
