Observation: The metal panel found inside of upper compartment of ice machine has small amount of mildew-like deposits.
Corrective Action(s): Remove ice and clean/sanitize the ice machine. You must routinely clean and sanitize the ice machine in accordance with the manufacturer's directions to avoid the build-up of mould and mildew, which could lead to the contamination of ice.

Observation: Small number of fruit fries were observed mainly at the front bar and dry storage area.
Corrective Action(s): Implement Integrated Pest Management approach (IPM) - continue to work with your pest control company, improve sanitation, identify possible attractants (e.g., decaying foods under a counter, drink syrup spll, etc.), discourage pest entering, etc.

Observation (CORRECTED DURING INSPECTION): Observed a single use plastic container being used as raw rice scoop. The manager removed the container at this time. Single use plastic containers are not meant to be washed/sanitized. Also, plastic can break and chipped which can lead to physical contamination of food.

Hygiene and Sanitizing
Hand washing station(s) equipped with hot and cold running water, liquid soap and paper towels.
General sanitation is adequate.
The facility now uses sanitizer with Dodecylbenzenesulfonic acid as an active ingredient from EcoLab. Tested at appropriate concentration.
High temperature dishwasher final rinse cycle noted at 71°C. Temperature is routinely checked and alarm is available should the temperature fail to meet sanitizing requirement.
Washroom facility in a sanitary condition.
In-use utensils stored in a sanitary manner.
Clean-in-place equipment are in sanitary condition.
Adequate handwashing noted.
Staff demonstrates good hygiene.

Notes:
*Observed raw steaks are being prepared at the salad/dessert station. Reviewed cleaning/sanitizing procedure between handling raw proteinaceous products and other ready-to-eat products (e.g., salad).
*Dodecylbenzenesulfonic Acid sanitizer test strips are required on site. Regularly check the concentration as per your sanitation plan.
