Corrective Action(s): Ensure cooked food items are cooled according to 60 degrees Celsius to 20 degrees Celsius in 2 hours and 20 to 4 degrees Celsius in 4 hours. Food is not to be cooled on floor. Ensure cooling occurs with ice bath in sink or other suitably large container or use of ice wand.
