Routine inspection - Hand washing station maintained. Staff hand washing and proper use of gloves were observed. - 3-compartment sink for dishware washing maintained. Staff were observed washing and sanitizing dishware. Sanitizer QUAT measured at 200 ppm.concentration. - Food in under the counter cooler with inserts is below 4C. - Walk in cooler is at 4C or colder. - Walk in freezer is at -18C. Food is frozen to touch. Reminder: Ensure to maintain temperature log for coolers and freezers and hot holding unit. Temp. log is to be kept up-to-date. - Hot holding is at or above 60C - Proper cooling procedure for cooked beef and chicken was observed. - Ice machine is clean and ice scoop stored properly in a clean container. Ice well is clean and maintained. - No obvious sign of pest at this date. Pest management is by a pest control company. - Staff are food safe trained. - Health permit posted.
