Comments

Reinspection based on previous Inspection Report.
- Food Storage: Continue efforts to keep all food stored in covered, food grade containers. Any damaged/deteriorating containers are to be removed. Cooked food items above raw food items. Storage of items off of floors recommended.
- No food prep permitted on deteriorating surfaces. Approved cutting boards required. Clean and disinfect after use.
- Mechanical dishwasher: Ensure all food contact surfaces are being washed and disinfected after use. Air dry. Store in a sanitary manner - clean storage containers.
- Wiping cloths: Limit the amount of cloths being used. Any cloths, used on food contact surfaces, are required to be stored in a sanitizer at all times. (completely submerged) Sanitizer: 1/2 tsp bleach per litre of water.
- Sanitation: Good improvements noted. Regular cleaning schedules are to be followed in order to prevent a build up of food debris. Hard to reach areas (ie: along walls, behind/under equipment is required.)
- Structurally: Ongoing. As noted.
