Observation (CORRECTED DURING INSPECTION): Bleach sanitizer pail had no detectable chlorine concentration.
Corrective Action(s): Chlorine disinfectant at 100ppm to 200ppm is required to properly sanitize food contact surfaces. Bleach at 200ppm was prepared at the time of inspection.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Staff member was observed handling cell phone following by carrying out food preparation (stirring ghee) and two staff members were observed wiping hands on aprons.
Corrective Action(s): Staff must adhere to proper hand hygiene practices. If staff handle items such as phones, they must properly wash their hands prior to carrying out food preparation. Discontinue the practice of wiping hands on aprons - hands must be properly washed to prevent potential cross contamination.

Observation: 1) Pail of detergent was found stored above a container of glucose. This is a repeat issue.
2) Scoops were stored directly inside ingredient containers.
Corrective Action(s): 1) Chemicals must be stored separately from foods to prevent potential chemical contamination of foods. Chemical pail was relocated at the time of inspection.
2) Scoops must be stored in a manner which prevents potential contamination of ingredients.

Observation: Light cover is missing for the light fixture in the walk-in freezer.
Corrective Action(s): Replace walk-in freezer light cover to protect foods from potential broken glass contamination.

Comments

-Walk-in cooler was at 3C.
-Prep cooler was at 4C (top and bottom).
-Sweets cooler was at 4C.
-Upright freezer was at -15C.
-Walk-in freezer was at -13C.
-3-compartment sink was prepared with bleach at 200ppm. Staff stated operator is in the process of changing current sink set-up for a single 3-compartment sink. If facility changes current sinks, operator must ensure sink is sufficiently sized to allow for washing and sanitizing of largest piece of equipment used in the facility. Contact the inspector once the renovation has been completed.
-Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General food storage practices improved. Raw meats stored below ready-to-eat foods and foods stored off the floor and covered.
-Food items are no longer being stored in used poultry containers.
-General sanitation satisfactory at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
