Code 301 noted on Routine inspection # MLUO-BHLR6C of Nov-04-2019
Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Ice machine was greasy/grimey (inside).
2. Wiping cloths were left on counter tops in the servers' area.
Correction: 1. Empty ice machine and wash inside thoroughly and sanitize before re-filling with ice.
2. Store wiping cloths in sanitizing solution at all times when not in use and change sanitizer regularly.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. Dishwasher did not have chlorine residual at the plate surface. Sanitizer container was half full. Sanitizer in the line did not appear to be moving. 2. Slicer machine was not cleaned properly (food debris found on the slicer and plastic guard).
Correction: 1. Service this equipment immediately. For the mean time, wash dishes in dishwasher but sanitize dishes manually using the 2 comp-sink available and air dry. 2. Clean slicer machine thoroughly and sanitize. All removable parts to be taken off to be washed and sanitized before putting back together.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: A Quats sanitizer dispenser is available on site, however the buckets containing cleaning cloths contained 0 ppm Quats. On questioning staff, they stated that only soup had been added to the bucket and they were unaware that sanitizer was required. On testing the quats dispenser, it was found to dispense only 100 ppm quats (200 ppm is required for adequate disinfection of food contact surfaces.)
Correction: Staff opted to use the bleach available over Quats and they were instructed how to make 100 ppm bleach solution. 100 ppm bleach will be used to sanitize food contact surfaces until the Quats dispenser is working.
Comments

All outstanding items from previous routine inspection have been corrected except for:
a washable cover for the upright cooler in the servers' area.
Staff asked for feedback for type of material to be used - non-porous, washable and sanitizable and durable.
Dishwasher had chlorine residual of 100 ppm at plate surface.
Slicer machine now cleaned and sanitized (all parts cleaned).
Ice machine grime build up removed and sanitized.
Raw meats now on the bottom of the drawer
Dry storage area organized and clean plastic cover for chaffing dishes underneath prep tables.
