Observation: 1. Raw animal products observed above ready to eat foods.
2. Pooling liquid observed in lower left portion of preparation cooler.
Corrective Action(s): 1. Packaged raw meat was placed onto lowest shelf of upright cooler that is located in the back area. Ensure that all raw animal products are not stored above any foods that are considered ready-to-eat (i.e. no cook step prior to serving). This is to limit potential contamination from raw juices that may potentially drip onto foods below.
2. No food observed to be in direct contact with liquid at the time of inspection (food in containers with lids). Ensure that all liquid is removed from affected area. If issue persists, have cooler serviced. Date to be corrected by: Today.

Routine inspection conducted:

- Preparation cooler at 4 degrees C (below) and 6 degrees C (above, food inserts). Note: Inspection conducted during and near the end of lunch rush; ensure that food inserts reach an internal food temperature of 4 degrees C or less.
- Upright cooler (front) at 4 degrees C
- Under counter cooler at 4 degrees C
- Upright cooler (back) at 3 degrees C
- Freezer at -15 degrees C
- Hot holding internal temperatures at 60 degrees C or more.
- Discussed cooling practices for cooked items with operator--no concerns. No changes to cooling procedures.
- Hand washing station is unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Bleach water sanitizer is available at 100 to 200 ppm chlorine in spray bottles. One spray bottle that did not have any label was labeled at time of inspection.
- High temperature dishwasher measured 73 degrees C at utensil surface during final rinse (minimum 71 degrees C at utensil surface).
- Equipment and utensils maintained in sanitary condition.
- No signs of pest activity noted at time of inspection
- Washrooms maintained in clean condition
- FOODSAFE requirements met at time of inspection. Operator's FOODSAFE Level 1 certificate is valid to 2023.
