Observation (CORRECTED DURING INSPECTION): Large glass door cooler was defrosted this morning (as per operator food was put in alternate cooler during defrosting).
The food and air temperatures during inspection are above 4 C (8 C).
Corrective Action(s): Remove all potentially hazardous foods (dairy, etc.) immediately and do not store any of these foods in this cooler until it can keep them at 4 C or colder.

Comments

Domestic cooler - air temperature is above 4 C but food temperature is ok (door was opened a lot during inspection).
Bar cooler is for produce and non-potentially hazardous foods only.
Cooler by grill is at 4 C.
Hand washing stations have liquid soap and paper towels.
Chlorine sanitizer is used on counters etc.
Dishwasher has a hot water sanitizing rinse (71 C measured inside and gauge for final rinse now reads above 82 C - good.
