Observation (CORRECTED DURING INSPECTION): Five bags of raw chicken (approx 10 wings/thighs per bag) found stored in prep sink at an internal temperature of 24 degrees C. Discarded at time of inspection. Please ensure that cold potentially hazardous foods are maintained at 4 degrees C or less to limit the growth of potential pathogens and/or toxins, which may not be destroyed by cooking.

Observation: Neither of the two employees on site were FOODSAFE Level 1 certified (or equivalent). Operator arrived part way through inspection.
Corrective Action(s): Ensure that an adequate number of staff are FOODSAFE Level 1 certified (or equivalent) so that at any time during operation, at least one staff member on duty is certified. Keep copies of all FOODSAFE certificates on site. Date to be corrected by: December 23, 2017.

Follow up to Rpt # MBEK-ATBVQF.

Three sinks plugs available for manual ware washing. Discussed warewashing procedures and provided manual warewashing poster. Bleach on site.
Some cleaning has been done. Thank you. Please focus on hard to reach areas, especially cook line equipment (on, below, behind). Janitorial closet, utility sink, and mop buckets will also require a deep cleaning.

Remaining:
Provide new tiles for cook line area.
Thermometers discussed in previous report (for all cold/hot holding units as well as probe thermometer)
Light bulb in walk in freezer is missing--ensure that a working light bulb is provided. Please ensure a shatterproof shield is in place.

Note:
Operator would like to warm raw chicken prior to cooking to facilitate more rapid and thorough cooking of chicken. Please forward proposal and revised food safety plan to inspector prior to implementation of these procedures. Time/temperature controls must be in place.
