All coolers were < 4 C.
All freezers were < -18 C.
Menu reviewed.
No evidence of pests.
All food is in pest proof containers.
The dishwasher final rinse cycle reached 74 C at the plate level.
Dishwasher and sanitation records are kept daily.
All conditions of the permit are being followed at this point in time.
