Observation (CORRECTED DURING INSPECTION): Chlorine sanitizer bucket observed on the cookline to measure at 0ppm chlorine. Low-temperature dishwasher measured at 0ppm chlorine.
Corrective Action(s): Prepare chlorine sanitizer bucket and spray bottle for the kitchen and front servicing areas to measure between 100-200ppm chlorine. Service the low-temperature dishwasher to measure between 50-200ppm chlorine.

Observation (CORRECTED DURING INSPECTION): Handwashing sink in the cookline observed to be obstructed with pans inside the sink.
Corrective Action(s): Ensure all handwashing sinks are well equipped with hot and cold running water, liquid soap, and paper towels. All handwashing sinks must be unobstructed to ensure staff hand hygiene.

Observation: Several containers of sauces, pakoras, chopped vegetables observed to be uncover in the walk-in cooler, preparation cooler. Scoops and bowls observed to be stored inside sauces. Double stacking of chopped veggetables observed in the walk-in cooler. Raw fish observed to be stored beside cooked meats in the walk-in cooler. Coke observed to be inside ice machine. THIS IS A REPEAT VIOLATION. Pictures taken.

Corrective Action(s): Cover all food with food-grade plastic wrap or lids. Ensure scoops and bowls are not in direct contact with food to prevent possible cross-contamination. Do not double stack food items and ensure all raw meats are stored below all ready-to-eat foods. Remove coke from the ice machine. Corrected by: Immediately.

Observation: Rodent droppings observed underneath and around the following areas:
-Dishpit.
-Stainless steel tables in the kitchen areas.
-Water heater.
-Shelving units in the dry storage areas.

Flies observed around the dry storage area.

Operator present bi-weekly pest reports and noted various rats trapped in tin can.
Corrective Action(s): Clean and sanitize aforementioned areas. Pressure wash and do a deep cleaning to remove all rodent droppings. Continue to contract bi-weekly pest company and retain all reports for inspector's review. Clear drain near the dry storage area to ensure flies are under control. Corrected by: July 5, 2022.

Observation: Built-up of food debris and grease observed underneath the cookline equipment and stainless steel worktables.
Corrective Action(s): Clean and sanitize the aforementioned areas to remove food debris and grease build-up. Review facility Sanitation Plan on daily, weekly sanitation of premises. Corrected by: July 5, 2022.

Observation: Low-temperature dishwasher measured at 0ppm chlorine. Latch handle of walk-in cooler observed to be missing. Stand-up freezer at the back in the dry storage area observed to be at -9C and has built-up of ice.
Corrective Action(s): Service the following items:
-Low-temperature dishwasher measured at 50-200ppm chlorine. Corrected at the time of inspection.
-Repair latch handle of walk-in cooler and service the stand-up freezer to measure at -18C and clear ice build-up. Corrected by: July 5, 2022.

Walk-in cooler and preparation cooler measured at 4C.

NOTE: Ensure to follow daily and weekly cleaning of premises. All food must be stored at least 6inches off the floor. Staff must have valid FOODSAFE Level 1. Purchase and use ice wand or use shallow containers to cool large batches of sauces.
