Observation (CORRECTED DURING INSPECTION): Alot of potentially hazardous foods are left at room temperature with no time tracking. These include - sides dishes for customers; bean sprouts; cut vegetables; marinated cooked eggs; noodles, etc.
Corrective Action(s): Potentially hazardous foods must be kept cold (under 4oC); hot (over 60oC); or if at room temperature time tracking must be done. This has been discussed many times with operator. All foods at room temperature discarded.

Observation: Pink and black mildew observed in ice machine.

2. While bleach sanitizer in bucket is observed for the front end, no bleach sanitizer is made for the kitchen.
Corrective Action(s): 1. Repair dishwasher so that at least 50ppm chlorine is detected on dishware.
2. Bleach sanitizer must be made first thing in the morning, before any food preparation occurs.
