Follow up inspection conducted: -Cleaning greatly improved underneath cooking line, grease debris removed -old broken backdoor screen has been removed, new one to be placed. Back door closed at time of inspection -Upstairs dry storage area has been re-organized and is much cleaner. All mice droppings have been removed -3 compartment sink was setup properly with bleach water at 100 ppm chlorine residual in the 3rd compartment and soap/water filled in the 1st compartment -Fumehood canopy baffles are clean and in sanitary condition -Operator is still to do the following: 1) Submit copy of floor plan for adjacent unit 2) Remove the old prep cooler and organize the adjacent unit 3) Fill out application form for an address change to include the unit next door (so that permit has both units #123 and #124) 4) Obtain an inspection before opening the second unit to the public
