Observation: Small number of rodent droppings noted under sinks (by monitoring traps) and in vacuum storage cupboard. Food is in pest proof containers and monitoring traps are empty.
Corrective Action(s): Improve cleaning, seal holes where pests may enter, and increase monitoring. If activity is noted, consult with a licenced pest control company and follow pest control advice.

Observation: Droppings noted under sinks and in vaccuum storage cupboard.

Comments

Large cooler and 4 other coolers - all are at 4 C/40 F or colder - good. Display cooler is at 4C after door left shut.
Temperature records are being kept - good.
No hot holding observed during inspection.
Food safety plan - soups are reheated to 74C/165F.

Food in coolers is labelled and dated - good.
Hand washing station has hot/cold water, liquid soap, and paper towels in dispensers.
Wooden board cannot be cleaned - see above.
Quats sanitizer measured at about 200ppm - wiping cloths stored in sanitizer in bucket - good.
Use sanitizer every 4 hours on food contact surfaces that are used continuously throughout day (include this in your sanitation plan - update if necessary).
Bleach (chlorine) sanitizer - also available. Poster provided.
Commercial dishwasher has a final sanitizing rinse of 82C/180F as shown on the gauge and 71C/160F measured inside of the machine - this was after a few runs. Make sure it reaches this temper.
Operator on site has a valid equivalent to Food Safe certificate. ***Check expiry date and note that the certificate can be renewed by taking a refresher course before it expires.
Pest control - see above.
Premises is being routinely cleaned - see above.
***Future renovations should include a hand washing sink in the west area of the kitchen. In meantime, staff using this area use main kitchen hand sink.
