Comments

Ensure portions at room temperature are managed such that you can use up that food in 2 hrs or less. Left-overs must be thrown out.
General cleanliness is pretty good - shelves in back storage area painted. Good.
- Ensure the flour bins and related area are regularly cleaned to keep that environment sanitary.
Cooling units all less than 4 C. Ensure the warmer is set and checked to keep food above 60 C. Hot holding in soups, broths above 60 C.

Avoid using wet cloths on hands in front after handwashing - use only paper towels - always have a supply on hand.
