Observation: Main floor prep kitchen dishwasher - part is on order. Sign is posted to ensure that staff use second floor dishwasher or sanitize in sink (today 100ppm chlorine is being used - good). Bar cooler on second floor is still not keeping 4 C or colder.
Corrective Action(s): Repair the booster for the prep cooler dishwasher and use only when the hot water final sanitizing rinse reaches 82 C / 180 F (or 71 C measured inside the machine).
Repair the bar cooler if it is to be used for storing milk or dairy products.
