Observation: Heavy grease and food accumulation noted throughout premises on the floors under equipment, on the walls around cooking line and on the fronts of cooler doors. This is a repeat, uncorrected violation.
Corrective Action(s): Extensive cleaning is required throughout the premises to remove all of the food debris and grease build up.

Observation: Found large pot of ground beef cooling in the walk in cooler.
Correction: Must cool foods in small portions to ensure cooling is done rapidly.
Cooling must be done in less then 6 hours ( 2 hrs 60 C to 20 C, 4 hrs 20 C to 4 C).

Observation: 1. Sanitizer bucket had excessive chlorine, >200 ppm.
2. Ice machine had mildew starting inside the unit.
3. Multiple dry good containers had food debris accumulating on the surface and are not kept in a sanitary manner.
Correction: 1. Ensure sanitizer is 100 - 200 ppm chlorine. 1 tsp chlorine per litre water (corrected)
2. Ensure the ice machine is cleaned out and sanitized
3. all food containers need to be washed, sanitized and maintained in a sanitary manner.

Correction: - Glass washers need to have 50 ppm chlorine in the final rinse.
- Do not use glass washer until unit is repaired and has a final rinse of 50 ppm chlorine.
- Use the large dishwasher for all glassware until repaired.
