Routine Inspection
-Handwashing sinks equipped with hot/cold running water, liquid soap and single use towels
-Surface sanitizer registered at 200 ppm quats. Ensure all bottles are labelled. A few bottles had the label fading away.
-High temperature dishwasher registered at least 71C on plate surface during the final rinse/after the second run. Ensure dishwasher is warmed up before it is used and that temperatures are monitored.
-All coolers at 4C or below.
-All freezers at -18C or below.
-No hot holding at the time of inspection.
Reminder:
-Cut fruits (cantaloupe, honeydew, strawberries) must be refrigerated immediately after brekafast service and cannot be stored above 4 C for more than 2 hours.
-Sweep behind and underneath shelves in dry storage.
