Routine Inspection
- Hand washing stations are provided with hot/cold running water, liquid soap and paper towels in dispensers. staff proper hand washing was observed at the time of inspection.
- All coolers are at or below 4C. Temperature monitoring log report observed to be updated and temperatures in compliance.
- Freezer air temperature measured being at -8C at the time of inspection in the midst of defrost mode. Food found frozen to touch.
- Hot holding unit measured at 60C or hotter. Staff demonstrated proper use of probe thermometer to measure internal temperature of the food.
- Walk in cooler shelve clean and organized. Food is covered and properly labeled. Floor is clean and free of food debris.
- RTE low risk Food in non-cooled inserts noted to be labeled properly.
- Sani buckets available filled with chlorine 100-200 ppm concentration. Wiping cloths stored in buckets properly. Cloths get laundered frequently and stored in sanitizer solution.
- 3-compartment sink maintained. Staff observed to follow proper ware washing procedure. QUAT sanitizer measured at 200-400 ppm concentration being in sanitizing compartment of the sink. Ware washing procedure, wash, rinse and sanitize observed being followed in adequate manner.
- Milk and soft drink coolers are clean and well maintained. Thermometer noted.
General sanitation is satisfactory. Floors are clean and free of build-ups. Garbage area noted to be organized and bins have proper lids.
No obvious sign of pest activity observed at this date.
Operation is satisfactory overall. A copy of this report left with the operator.
