Observation: Rodent droppings observed throughout facility, with concentrated amounts found in the following areas;
- under standing freezer (beside sinks)
- on dough mixer machine
- around dough mixer (floor)
- underneath cardboard boxes
Corrective Action(s): 1) Move all food, storage, refrigeration systems away from the walls in order to assess walls/ floors/ equipment
2) Mix up 1 part bleach with 9 parts water. Spray droppings and wipe up while wet.
3) Have your pest control come on site. Have their past and current reports available for inspection tomorrow.

Observation: Vegetable slicer found with a loose blade about to fall off
Corrective Action(s): Replace the blade portion of your slicer. Do not use broken, as the sharp blade piece can fall off into your food.

Main hand sink supplied with liquid soap, paper towels, but no hot water
Bathroom sink missing hand soap
Back walk in cooler being used for dry storage. Ensure humidity and mould doesn't become a problem here.
Freezers that are on and operational ranged from -12 to 18C
**Note many of your freezer and refrigeration units require cleaning and/ or defrosting
2 types of sanitizer found on site in spray bottles - chlorine (bleach) at 200ppm, and quats at 200ppm
**Make sure your prep boards are being regularly cleaned AND sanitized
Prep cooler found at 4C
**Temperature needs to be cooler below in order to keep pizza toppings at 4C in above compartments
